4 Bean Relish

I saw Guy Fieri make this on TV and had to try it.  It is not your regular bean salad.  It has a couple of secret ingredients!  Now I know you think those little red specks are just plain old red peppers, but I have a surprise for you!  Those red specks are my new favorite ingredient ........ These are can be hot or mild.  I like the hot Peppadews!  They are sweet and hot at the same time.  These add the final twist to a very delicious side dish!

Guacamole

This is my recipe!!  I made it once for a party at my sister Karen's house and my brother Brian ate half the bowl.  He came in the house and asked me what that green stuff was.  When I told him it was guacamole

he replied, "No, it can't be.  I don't like guacamole!"  Well, he likes my guacamole and I hope you do to.  It has a secret ingredient!!

Denise Rickard's French Toast

This can be made the night before or the morning of!  I got this one from my sister-in-law Denise Rickard years ago.  I put the leftovers in the fridge and the boys all thought it was leftover garlic bread.  When I finally asked why they weren't eating the leftover french toast, they took it out of the fridge and WOLFED it down!  Therefore you can summize that it also tastes good warmed up!

Swiss Potato Casserole

This is a step away from the other potato dish everyone makes called "Party Potatoes"! This dish is made with swiss cheese. I love how it browns up on the top. I made this for Father's day as well. It was very easy to put together.

When you serve it up, you can see all that cheesy gooeyness just oozing out!!!
I think this is going to be a family favorite.

Spinach Squares

I served these as an appetizer for Father's Day.  It was a very simle recipe and while it was baking I prepared the other items I needed for the rest of the dinner.  These can be cooked ahead and reheated, but I was busy golfing with Tom, Trevor and Tim Linton on Father's day.  No time for preparing ahead that day!  Thanks for the recipe Chris Roach!

Oatmeal Pancakes

I decided to start off Father's Day with something on the healthier side.  Thanks to Chris Roach, I was able to do this.  These may not look like much now..........


but just add some syrup and a little fruit and these Oatmeal Buttermilk Pancakes take on a whole new desire.  Maybe just a couple of blueberries isn't doing it for you......
Well then add some plums and cherries too!!  Or maybe......
a whole bowl of blueberries!!  What ever you do, I think you will really like these pancakes.  They are a nice change from the ordinary pancake! (Thanks for helping out TJ!)

Scallops in Lemon Butter Sauce

I have no idea where this recipe came from.  I had it in my recipe file, so therefore I am putting it under my name in the book!  If you are a scallop lover, then this recipe is for you.  The lemon flavor is just right mixed in with the spinach, rice, scallops and seasonings.  You will not believe how easy this is.  Don't you just want to take a bite right now?

Zucchini Boats




These were very easy and quite tasty!  LOTS of VEGGIES!


Top them with some cheese and bake away!

They were very easy to serve and reheat nicely!  I would make these again.  I am always looking for something to do with zucchinis!

Pesto Potato Salad


I absolutely LOVE, LOVE, LOVE this potato salad.  If you love pesto, you are going to love this.  It does have a homemade pesto, but this time I took a shortcut and used a jar of my favorite pesto along with the other ingredients this recipe calls for.  The homemade pesto is excellent, I like it either way!

Basmati Rice - Chawal Khuska

This is one of my favorite recipes.  If you have not had Basmati rice, here is a great recipe that will get you hooked on it.  All those little specks you see on the white rice are actually spices you add to it right from the get go.......cinnamon, cloves, cardamon, and cumin......THE 4C's!  LOL!  I usually top this with Dadai Murg (Chicken in Aromatic Sauce!)  I will post that recipe tomorrow.

Blueberry Sour Cream Pancakes

Who is ready for some really yummy antioxidants?  LOL, especially when they are disguised as blueberry pancakes!! I had this at my sister Karen's house a long time ago.  She doesn't know I am putting it in the book, but I think you will be glad that I did.  This pancake trully needs no butter or other syrup.  Everything is made from scratch ......even the blueberry syrup.  Blueberries are in abundance right now, so this is the perfect time to take 5 cups of blueberries and whip this up!  (Don't worry, you don't have to use fresh blueberries.  Frozen blueberries can also be used!)

Heath Bar Treats



I had to follow up yesterday's treat with it's cousin the Heath Bar Treat.  We have all made them and fallen in love with them.  They are kind of like Lay's potato chips......you can't eat just one.  The pan is lined with Saltine crackers, then a mixture of brown sugar and butter (No calories there), baked and then topped with chocolate chips and walnuts.  These freeze very nicely!! (They taste good frozen too, just in case you can't wait for them to defrost!)

Club Cracker Treat

Here is a great way to end your Friday night!!  These little babies are loaded with calories and UNBELIEVABLE flavor.  You would not believe how easy this is.  They freeze very nicely and are a quick dessert for unexpected company.  The bottom layer is a club cracker with some butter and sugar.  Then you top it off with coconut and walnuts.  These are very similar to the heath bar cookies that everyone makes out of the saltine crackers!

Homemade Spaghetti Sauce and Crockpot Ribs

This recipe calls for simmering on the stove for 3 to 4 hours.  I didn't have time to sit and watch it simmer, so I decided to put it in the crockpot and let it stew all night.  (10 hours on low.)
The sauce tastes better if you put some kind of meat in it, so I decided to use ribs.  I bought a big pack of ribs, cut one in half and put that half in the spaghetti sauce.  You can see it on the plate above from when the sauce was done.  The meat just falls off the bone when it is done.  (I put the rest of the ribs in another crock pot with a bottle of barbeque sauce and let that simmer for the same amount of time, 10 hours on low.
I then put the meat back in the sauce.  It was perfect just the way it was.
However, if you are missing that oregano flavor you could add some of Penzey's Pasta Sprinkle.  Delicious as well!

Sweet and Sour Meatballs


This is so easy and quick.  I wasn't sure the sauce would form, but after about an hour of simmering on the stove.....WALLAH....you have sweet and sour meatballs.  I had this at my sister's house about a year ago and asked her for the recipe.  I just love simple and quick, don't you?
