Baked Eggnog French Toast with Apples and Apricots

My sister Karen made this for us last year when we were at her house. It is made with french bread and eggnog.  I had a terrible waiting for eggnog to come out again in the supermarket.  I know you can make your own, but I wasn't about to do that. 
The bread is topped with and apple and apricot mixture.  I bet golden raisins would also be good in here. 
The whole mixture is topped with nuts.  If Tanner was home, I would have to leave those off!  Karen did leave them off when she made it, but this time, I got to try it WITH the nuts.  It was good both ways. 
Looks good doesn't it?

Sweet Potato Casserole

This was so easy to make.  It is just cooked and cubed sweet potatoes with a lovely golden raisin glaze topped with some slivered almonds.  (I had to do those by hand...forgot to buy them!!)

BBQ Meatballs

Jana gave me this recipe and I made it a while ago.  It made 3 pounds of meatballs.
I made these in the oven , but Jana also makes them in the crockpot.  They freeze very well. 
The first time I served them, I had potatoes as a side dish.  These are great in a bun.  I recently defrosted some and they were just as yummy as the first time.

Taco Soup

Now doesn't this look yummy?  You can barely see them, but yes those are Fritos on the bottom!   This recipe is done in the crockpot and is super simple with lots of fun ingredients for a great taste!!  Don't forget to add your jalapenos at the end!!

Crockpot Brown Sugar Chili

I am not a big kidney bean fan, so I used red beans in this recipe.  Patty Pericak gave me the original recipe along with how she REALLY makes it.  You will have to decide which way is best for you.  It smelled so good cooking in the crockpot.  Two hours and it was done!

Summer Salad

Tired of the same old chicken on top of your salad?  Try some crab and strawberries.

This Raspberry Pecan dressing is amazing and IT IS FAT FREE!!  Tastes good and fat free....REALLY??  YES!!!!

Need a little crunch?  Add some candied pecans or walnuts.

I bought these already made at my local supermarket.  They made this salad even easier, I didn't have to candy them up myself!!

Shipwreck Baked Beans

These were mighty delicious.  If you get stranded on an island because your "ship wrecks" be sure to bring these along!! 
Lots of meat in here.  I think that is why my family liked them so much. One whole pound of hamburger and a whole pound of bacon are in here!

Caprese Salad with a Fruity Twist

Are you tired of the same old tomato and mozzarella salad drizzled with balsamic vinegrette?  You will have to try this one!

Arrange the tomatoes, cheese, raspberries and strawberries, along with a little fresh basil!  Drizzle with a little raspberry salad dressing.  Yum!

Barbequed Hamburgers

This really is an amazing dish.....and sooooo easy!!

Little hamburger patties, onions and some special sauce.

They are not like your traditional burgers on the grill size.  They are small and round.  You could eat these by themselves without anything if you wanted to. 

Tom, Noel, and TJ put theirs on buns and made sandwiches out of them.

I chose to put one on my mashed potatoes, and I LOVED IT!!  You may have to add more salt.  I probably don't use as much as most people might. 

Pineapple Iced Tea


Just a few simple ingredients will give you a nice refreshing iced tea.

Find a pretty pitcher and leave it out at a party.  I think you will find that your guests will like something just a little different.
