Delicious Taco Salad

Look at all those lovely ingredients!  This has everything you need except crunch and dressing.....oh wait a minute.....
You get to crunch up chips and then make a delicious homemade dressing to put on top!...Don't worry, it is super easy!  Put the broken chips on top, pour the salad dressing on top of that and TOSS.  have already made this twice for my family....it is that good!

Oven French Toast

You are going to be surprised by the ease of this recipe and the flavor.  You will need a fresh orange for the grated orange rind, however, next time I make it I am going to use some dried orange rind from Penzey's and see how that works.
This french toast is so good, it doesn't even need syrup....in fact, I think that syrup would take away from the great orange flavor!!

Pasta Salad

My mother-in-law Barbara Burke got this from her friend Mary Rench.  This is a light simple salad that lasts a long time in the refrigerator!! 
We had it as part of a dinner up at lake Okoboji!  It is great if you have guests coming over. I ate it for lunch the next day.  It was delicious and simple.

Texas Style Banana Pudding

This dessert is layered with a pudding mixture, vanilla cookies and banana slices.
Finish with another layer of everything ending with the pudding layer.
Design the top with the leftover vanilla cookies.  Bananas will turn brown, so you might want to skip using those.
Serve it up in any dish you like, I thought it looked nice in these cups with a vanilla wafer garnish.  I can see why this is Lizzie's favorite birthday cake.  It is easy and delicious!

So simple you won't believe it .... Mix together just a few ingredients .... Bake it in the oven or a crockpot...

Fresh Berry Tart

You can really let your creativity come through on this one!!
I used strawberries, raspberries, and blueberries, but you could really use any fresh fruit that you want to.
You use a ready made crust.  I bought frozen crusts, so I just let it thaw and carefully removed it from the foil pan, and placed it in my tart pan.  It worked just fine.  The filling is just cream cheese, sugar and OJ!  Then it is topped off with some red currant jelly!  It was a total hit when I served it at our card game with the Geraci's!!  Thanks Kim Carlson!!

Denise Rickard's Cheesy Potatoes

This is made with real potatoes.  Make sure you mash them up right away so they don't get gooey.  Then you mix in 6 special ingredients and let it cook on low in the crockpot for 4 to 6 hours or bake at 350 degrees for 35 to 40 minutes!

Chicken Enchiladas from Joanne Mohler

You make up the chicken mixture....fold in the sides....
Roll up the bottom....
Place them in the pan....this arrangement worked nice for me....
Pour sauce over the whole thing...
Bake it ... put some cheese ... melt the cheese...
SERVE!!
You might want to put a little extra sauce on it like I did!!

Coffee Punch

This might not look so pretty in a stainless steel bowl, but the flavor is outstanding!  Tasted kind of like a cappuccino.  If I was at home, I would have served it in a pretty punch bowl, but in the Catskills we had to improvise!
We did have some lovely cups to serve it in and .......
.... some MANLY men to taste it!!
Hmmmmmm, you bet!  That is really tasty!!

Brownie Ganache with Berry Sauce

This recipe sounds like it would be difficult, but far from it.  If you want to impress your guests, whip this up!!  It starts with a store bought walmnut brownie mix, let them cool and then cut them into 20 squares.  Pour the homemade ganache over them and put them in the freezer to set.  You can leave them in the freezer until you are ready to serve them.
The berry sauce is also homemade, but extremely easy to do.  It tastes good on ice cream too!!  I left them frozen and took them to the Catskills trip.  They traveled well and so did the berry sauce.....just put them in a cooler with ice.  This dessert is so rich.....if you love chocolate and fruit......you are going to love this.

Stuffed Pepper Dip

I thought I would follow up the Stuffed Banana Peppers with something a little more simple and just as tasty as the suffed peppers.   Can you tell this one travels well?  I needed to take a dip along to the Catskills and I didn't want a whole lot of dishes leftover.  This was a throw away pan.  I served this with the stuffed peppers and the consensis was............they were both delicious!
This dip was a little easier to eat....all you needed were some chips and some hungry men!  (Thanks for posing Stephen and Tanner!!  (Thanks for the recipe Marissa!)

Stuffed Banana Peppers

I have enjoyed these at Julie Starr's house on a number of occasions!  We are so lucky that she has shared her recipe with us.  I couldn't believe it when the recipe called for 20 top 24 banana peppers.  I thought.....who is going to eat all these peppers??  Not to worry, they went like hot cakes!
I took some of them with us to the Catskills and I could have used more!  They really are delicious.  Too bad there wasn't a camera to watch me stuffing them with my cookie press.  I definitely could have used a few more hands.  I think next time I will use my Fun Gun....and yes that is an actual kitchen tool!

Grandma Carol's Chicken Wings

This is such a simple recipe!  It only has 4 ingredients.....however, it cooks for 3 hours in the oven so leave yourself some time!  Carol used to make these at our family get togethers, the plate was always empty by the end of the night.  My boys LOVE these!
They have a soy sauce base, so if you like Chinese, YOU will like these!
