Borscht

I know I already made Borscht, but this one is different!  The other one was strictly a vegetable Borscht........this one has beef in it.  I like them both!  This particulare recipe makes 2 gallons of soup!  YIKES!!  I was told it freezes well, so I froze some.  I gave some to Chris and Myron and it passed the Ukranian test............GOOD BORSCHT!  (Thanks Ann Serediuk)

Rye Party Puffs

These little globs of dough may not look like much now, but wait until you see what they turn into!

Add a few rye seeds, cook them in the oven and they turn into a puff similar to what a cream puff out side consistency is like................totally different taste though!

It doesn't take much to make these look pretty on a plate...........of course a pretty plate doesn't hurt!
Don't you want to just bite into this baby right now?

Lemon Sheet Cake

Can you say............GIVE ME ANOTHER PIECE OF THAT!  This cake was made in a jelly roll pan and I didn't believe it would fit, but it did!  The base is a luscious lemon cake, second layer is a pudding mixture and the third is cool whip and pineapple topped with nuts and coconut!  I was very surprised at how well this cake cuts and holds together.  I thought it would fall over the edge of the pan and I was proven wrong!

Fried Cabbage and Noodles

This was a nice surprise.  There really aren't many ingredients.  Nice and easy to make.  However, it ranks kind of high on the calorie scale........you do use the bacon grease.  Tom couldn't believe how much he liked it.  It is very similar to a dish they serve around western New York called Lazy Periogi.  I think the big difference is that this dish uses fresh cabbage and lazy perogi uses sauerkraut!

Jalapeno Chicken Taco Dip

This is one HOT item!  LITERALLY!  This is what the dish looked like before I microwaved it.
The recipe said to heat it in the mircowave for 3 minutes.  It actually took me about 6 minutes to get it to the temperature that really melted the cream cheese. 

Mary Steinkirchner brought this to a Superbowl party earlier this year and Tanner was a BIG FAN!

Homemade Buttermilk Pancakes

Who knew you could use these ingredients and come up with a GREAT HOMEMADE PANCAKE!  I actually made these down in Florida while we were on vacation.  I premeasured baggies of mix so that I could make fresh pancakes on a couple of different days. They were delicious, except for the batch that I burned ......Tom ate those!   This recipe makes a lot and stores well in the frig for up to 6 months.  (I just have mine on the counter in a tupperware container.)  This recipe came from Dorothy Cranston!!

This recipe is one of my favorites.  It is so easy you can make it in a snap.  I have served this at to guests for dinner and have been asked for the recipe quite often.

Kidney Bean Summer Salad

This was surprisingly refreshing!  A nice combination of ingredients.  I would suggest having some Bean-O handy so there will BE NO gas after consuming all these eggs and kidney beans!  LOL

Swedish Meatballs

First you have to brown these little babies in the oven for about 15 minutes.
Then you put them in the crockpot for about 4 to 6 hours on low to finish them off.  They were really yummy as a main dish to dinner, and they made a great sandwich the next day!!

Lime Fish

I know, I crowded them into the pan.  I did what I had to!  LOL
See, it turned out okay anyway!
I used a tilapia for the fish and I used seasoned Italian bread crumbs.  I think next time I might used unseasoned.  It was good, but maybe just a little too much Italian seasoning.  I think you will like this fish.  I really liked the lime flavor.  We usually have lemon with our fish!  Nice change.

Ranch Potatoes

Another easy potoato recipe.  This one called for real bacon, but I used the bacon bits in the jar.  It worked just fine.  Cheese and  bacon are sprinkled on the top right before you put them into the oven.
They come out all melted and yummy smelling!
Look................I saved a bowl full of them for you!

Roasted Red Potatoes with Bacon and Cheese

Have you all missed me?  I was on vacation, but now I am back.  I tried to post while I was away, but too much fun got in the way!  Don't really need to be on the computer when you can be in the sun!  You all remember the sun don't you?  That giant bright orb in the sky?  We don't see much of that in Buffalo over the winter months!  LOL  All right, here is your recipe of the day.  Thanks to Denise Hibit!

These were super simple and I like the fact that it uses red potatoes instead of regular.  I also liked the fact that you can use the tiny little REAL BACON bits in a jar.  (I told you this was super simple!)  I bet you can smell them cooking right now!
