Fruit Fluff

This recipe was probably one of the simplest things I have put together.  You buy ready made angel food cake, fresh strawberries, raspberries, and blueberries.  There is a pudding type mixture as well that goes in between and each layer and keeps it fresh.  I had this in my fridge for about a week as we slowly ate it, and every bite was wonderful!
It was fun decorating the top with the extra berries.

Beet Salad

I have wonderful friends who are always volunteering to bring things to each others parties.  My friend Karen Harris brought this beet salad to Tanner's graduation party.  She searched high and low and then ordered beets from the local market.  She cooked them and made this very delectable beet salad.

You can see the giant bowl she made for Tanner's graduation party!


I got a chance to get my hands on some beets as well and made a batch for myself.  The salad actually is placed on a bed of lettuce.  I did not realize this and only got the top layer of beets when I went through the line.  I can attest to the fact that whether you serve these over lettuce or not, if you like beets, you will like this salad!

Cream Cheese Cookies

Since it is so late, I HAD to post a dessert....a nice little bedtime snack.  These were gone so quickly.  They are called cookies, but you make them in a pan and cut them into squares.  Easy, easy, easy!! (Not to mention TASTY!)

Zucchini Magnifico

This dish was really delicious.  I had to tell my family that it was Hamburger Magnifico.  They are not big on zucchini.  Tom tasted it and actually  LOVED it.  He even went back to seconds.  TJ's friend Jessie thought those were pickles on top. (I was afraid to tell him they were zucchini.)  He actually was very happy to hear that those weren't pickles, he is not fond of them, but he loves zucchini!
I think once you dish it up and take a bite, you will love this dish!

Mock Chili Relleno


I know what you are thinking.....this dish doesn't really look like much!  HOWEVER, ....
just grab a spoon and dig in and you will find the riches buried beneath!
Lots of tomatoes, chilies, cheese, and eggs.  I bet you want to take a bite now don't you!  Too late, the boys ate it all!

Buffalo Wing Soup

Well, we can just thank Joanne Mohler up and down for this one!  There is just tasty goodness in every bite!!  Lots of calories, but definitely worth it.  This is so much better than actually eating a chicken wing drenched in Frank's hot sauce with blue cheese, carrots and celery.  It is so much easier eating all of that on a spoon!  LOVE IT and you will too!  My family inhaled it......and I don't think it is because we are from the Buffalo area!

Lizzie's Ice Cream Cake

This thing weighs a TON!  LOL  It has a whole bag of oreos, 1/2 gallon chocolate ice cream, 1/2 gallon vanilla ice cream and Reese's peanut butter cups.  It does need to set up in the freezer, so it did take a little while to make each layer.
You have to admit the work is worth the final product!  I may have let it soften up a little too much before I cut into it.  Didn't really matter though, this was really fabulous.  I can see why it is Lizzie's favorite birthday cake!

Marjoram Dijon Chicken

This recipe called for bread crumbs, so I used Panko bread crumbs to give it a little more crunch.  We did end up with leftovers, so I chopped it all up and added a little mayonnaise.  It made delicious sandwiches.

Cissy's Rice

When it is finished it has lots of yummy things in it including golden raisins!
I remember the first time I had this at my husband Tom's cousin Dan and Pam's house.  It is a very memorable rice dish.

Crockpot Potatoes

I lined the crockpot with a crockpot liner. It just makes it so easy to clean the crockpot out at the end.  I used red potatoes in this recipe.  These potatoes were super simple to make and would be a great addition to any party or just an average dinner.  I love make ahead things and this one was a HUGE hit.

Rib Rub and BBQ sauce

This recipe combines spices to be rubbed onto a rack of ribs.  I used beef ribs.  Rub the mixture onto the beef and let it sit for a whle.  Then I completely enclosed it in foil and let it cook on the grill on low heat for about 1 1/2 hours.  It was actually indirect heat......front and back burners on low and the middle burner off.
Here is part of the finished product.............or should I say what was left after I came back from my walk!  Everyone loved them.
I also got a recipe to go with the rub for this homemade BBQ sauce.  It is also delicious and you will want to make it and have it around for the summer!

Holiday Morning French Toast

This is made the day of or the night before.  I made it the night before and just tossed it in the oven the next morning.
It comes out with a nice crispy top.
Trevor and TJ couldn't wait to dig in!  The best part was the surprise at the bottom......
Apples and in this case....cherries, cranberries, and blueberries.  YUM!

Thunderbird Salad

I would order this salad everytime I went to Happy Hollow Country Club in Omaha, Nebraska.  It was created by the chef there.  This recipe is as close to the orginal as I have ever tasted.  You do have to be careful though, it is delicious, but as I learned when my friend Chris came over, too much of a good thing.........is not a GOOD thing!  The dressing in large amounts is over powering.  The message is ......a little goes a long way!
