I would order this salad everytime I went to Happy Hollow Country Club in Omaha, Nebraska. It was created by the chef there. This recipe is as close to the orginal as I have ever tasted. You do have to be careful though, it is delicious, but as I learned when my friend Chris came over, too much of a good thing.........is not a GOOD thing! The dressing in large amounts is over powering. The message is ......a little goes a long way!

Can you please share this recipe? I grew up in Central Illinois where the local country club served a version of this salad. I now live in Michigan and would LOVE to re-create it for my friends and family.
