Living in Buffalo, I had to become creative! I looked in the wild game section at Wegmans........yes, there is a wild game section in the fresh meat department. I found deer, buffalo, duck.........no pheasant! Hmmm, what a conundrum! Will chicken work? I don't really know if it is exactly the same as pheasant would turn out, but since Tom doesn't hunt I needed chicken to be my pheasant! All I really know is that it was just as delicious as every other recipe Nance Grinwald Sellman has given me! Thanks again Nancy.

Usually a good butcher shop will have them as well - or will know where you can get them.
